Quickly Toasted Sweet and Spicy Pepitas
1 tablespoon coconut oil or butter
1 pound raw pumpkin seeds
1/2 teaspoon cayenne powder
1/2 teaspoon cinnamon
2 teaspoons maple syrup
1. Preheat a large skillet over medium heat. Add oil and swirl to coat the skillet.
2. Add pepitas and sauté until golden brown, about 3 minutes.
3. Stir in cayenne, cinnamon and maple syrup. Transfer to a large bowl and let cool before enjoying.
4. Once completely cooled, store in an airtight container in the freezer for up to 1 year.
